Ingredients (Serves 2)

  • 150 g (5.3 oz) penne pasta
  • 150 g (5.3 oz) broccoli, cut into florets
  • 70 g (2.5 oz) sun-dried tomatoes (from a jar)
  • 2 cloves garlic, minced
  • Black pepper, to taste
  • Juice of ½ lemon
  • 2 tbsp pesto alla Genovese
  • 100 g (3.5 oz) feta cheese, crumbled
  • 5 sprigs fresh basil, roughly chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne and broccoli florets, cooking for about 6–8 minutes until the pasta is al dente and the broccoli is tender.
  2. Drain the water and return the pasta and broccoli to the pot.
  3. Stir in the sun-dried tomatoes and minced garlic. Season with black pepper.
  4. Add the lemon juice and pesto, mixing everything well to coat the pasta evenly.
  5. Crumble the feta cheese into the pot and stir gently until combined.
  6. Finish by folding in the fresh basil. Serve immediately while warm.
